Recommend both highly and would opt for whichever is cheapest at the moment. Both are made in France and seem to perform equally well. My wife has been using Silpat and Matfer silicone baking mats for years.
This is the best invention ever. Great product, which I definitely recommend. I meanwhile bought a 2nd one. The cookies I baked turned out wonderful. It is so easy to use and clean and you simply store it with your cookie pan. No more parchment paper.
I use it for cookies, brittle, prepping. Great purchase. Silpats are a must have for any baker.
I have used other cooking mats in the past (the ones that are supposed to make all your pans like teflon) and this hands down is far superior. Since nobody like the clean up part of cooking these would make a great gift for anyone. I also bought one for my two adult sons as they do a lot of baking and heating up of chicken tenders etc. They browned up beautifully and all I had to do was wipe them off with a paper towel. I just received them last week and made cheese sausage balls on them.
